Pumpkin Pie Ice cream

Ingredients:

  • 1 (15 oz.) can pumpkin
  • 1 cup milk
  • 1 egg
  • 2 egg whites
  • 3 tablespoons Stevia
  • ½ cup honey or maple syrup
  • 2 tsp. vanilla extract
  • 2 tsp. pumpkin pie spice
  • 3 oz. water
  • 2/3 cup vanilla or chocolate FitFreeze (one sample package) or your fav healthy food ice cream (here’s a site to help you decide if you don’t already have a fav!)

Directions:

  1. Order your FREE FitFreeze here!
  2. Preheat oven to 425 degrees Fahrenheit. Mix pumpkin, milk, and egg/egg whites until smooth.
  3. Gradually stir in Stevia, honey, and vanilla.
  4. Add the pumpkin pie spice, stir, and pour into a baking dish and spread evenly.
  5. Bake in the oven for 15 minutes then reduce the temperature to 350 degrees and bake for another 40-45 minutes.
  6. Let cool while you make your FitFreeze ice cream.
  7. Pour water into a blender with FitFreeze powder and mix for about 30 seconds.
  8. Add 1/8 of the pumpkin pie to the blender and mix on low for an additional 10 seconds. Freeze the remainder of the pie to use in this ice cream recipe another time.
  9. Pour mixture into small containers (or popsicle molds) and freeze. Let thaw until desired ice cream texture and enjoy!

Gluten Free And Almost Sugar Free Snickerdoodles

Sugary, sweet, and slightly spicy, who doesn’t love a good snickerdoodle?

These delectable cinnamon sugar goodies have been around for over a century, when they were especially popular in New England and Pennsylvania. The exact origin of these light and crispy cookies is not quite known, although some sources, such as The Joy of Cooking cookbook say they are German in origin. They state that the word “snickerdoodle” may have come from the German word “schneckennudein”, their name for a similar cookie. Others say they are Dutch in origin. No matter where they were first made, bakers everywhere love these cookies for the ease in which they can be put together with few ingredients already in their kitchens.

Unfortunately, snickerdoodles, traditionally made with white flour and sugar, are not the healthiest treat around. And since most of us can’t eat just one, they aren’t necessarily something you want to eat everyday. Until now.

With our carrot cake mix, you can whip up a batch of sweet and spicy snickerdoodles that are healthy and delicious. And because our carrot cake mix is gluten free, this makes a great treat for anyone with a gluten intolerance or wheat allergy. These are high in protein and fiber, but you’d never know to eat one!

Gluten Free Snickerdoodle Cookies Recipe

Yield: 24 cookies

For the cookies

  • Carrot Cake Mix
  • 1/2 cup pastured butter, at room temperature
  • 1 tsp. organic vanilla
  • 1 pastured egg
  • 1/4 tsp. cream of tartar

For rolling cookies

Preparation

  1. In mixing bowl, combine the softened butter, egg and vanilla. Blend well with mixer until well combined.
  2. Add the Carrot Cake Mix and cream of tartar, blending until all the ingredients are thoroughly mixed.
  3. Scrape the beaters to remove all the dough, then cover bowl with plastic wrap or a lid and chill one hour or longer.
  4. Meanwhile, preheat the oven to 350 degrees F. In a small shallow dish, combine the Coconut Sugar and cinnamon, stirring with a fork to break up any lumps in the coconut sugar.
  5. Scoop out heaping teaspoons of dough, and roll dough into balls about 1 inch across.
  6. Roll each ball lightly in the coconut sugar/cinnamon mixture. Place each cookie ball on a cookie sheet 2 inches apart.  (NOTE: If you’d like flatter/crispier cookies, lay a sheet of parchment over the cookie dough balls and press each one down slightly with your fingers – making sure to keeping them about 1/4 inch thick. You may also bake without pressing down for a more domed-shaped cookie).
  7. Transfer to oven and bake cookies about 14-16 minutes, until they’re light golden brown and are just barely crisp to the touch.
  8. Remove cookies from oven and let cool 20 minutes before serving. (They won’t hold together if you eat them too soon so allow to cool completely before attempting to eat them, as they’ll fall apart. If you can’t wait to taste one, you’ll find that they are just as delicious either way!!) . Store in an airtight container at room temperature for up to 3 days.

What is a frosting shot?  It’s exactly what it sounds like. A shot glass filled with the same thick and creamy frosting used to ice cakes and cupcakes, minus the cake part.

The good news is that we’ve given the traditional frosting shot a healthy makeover – and we promise it is still as sweet and creamy as your favorite bakery shot.

Here’s the difference: Our frosting shots are made with heart healthy coconut milk, grass fed butter, and our luxurious chocolate ganache – which is sugar free and full of rich chocolate flavor from sustainable, non-dutched, organic cocoa powder.

We start with some simple ingredients: 2 packets Wellness Bakeries Chocolate Ganache, 1/2 cup canned coconut milk (we like Native Forest Original since it’s BPA free),  a teaspoon of pure vanilla extract, and 8 ounces softened grass fed salted butter (such as Kerrygold or Organic Valley Pasture Butter)

First, add the coconut milk, vanilla, and ganache packets to a saucepan over medium low heat. Stir until the ganache is dissolved. Let cool slightly.

Next transfer the cooled mixture to a mixer bowl, and add the butter. Beat on high speed for about 2 minutes, until it’s fluffy.

If you can’t wait to taste it, grab a spoon and have at it.  Otherwise, pipe into shot glasses, and serve with dessert spoons.

  2. Stir to combine, and continue to stir until all granules have dissolved. Let cool slightly.
  3. Using a mixer, mix the butter and chocolate on high speed for 2 minutes until fully combined and fluffy.
  4. Pipe into shot glasses using a frosting piper.
